Farm to Table Menu Planning – A Local Approach

Speakers: Ruben Fields, Miccosukee Root Cellar and Louise Divine,Turkey Hill Farm

If you haven’t heard the term "farm to table," you haven’t been eating out much. Restaurants with menus featuring fresh, local ingredients have been popping up around our towns like butternut squash and heirloom tomatoes in an autumn garden. The demand for food free of hormones and pesticides, as well as tastier than any dish prepared with more than a pinch of preservatives, has people crowding into these eateries. It only makes sense to incorporate this healthy and delicious food into your events, too.

Menus created around local, seasonal, fresh-from-the-farm ingredients are increasingly popular, especially on the event circuit. We as planners want the dining choices of our events to reflect our company’s personality and individuality. Never fear: Going local, for everything from food to flowers, is easier than you think! Ruben Fields owner of Miccosukee Root Cellar and his mother, Louise Divine, owner of Turkey Hill Farm will discuss the advantages of farm to table menu planning at this month's roundtable.

Key Takeaways:

  • What are sustainable farming practices and how does it help the local economy?
  • How to prepare farm-to-table, grown-to-order menus
  • How to work with a chef who is willing and able to design a menu around seasonal crops
  • How far in advance is needed for planning a farm-to-table event
